Easy Valentine Cupcake Recipe

Choco­late Refrig­er­ator Cupcakes

Make some deli­cious cup­cakes for your Valentine!

Choco­late Refrig­er­ator Cupcakes

1 stick butter

1 1/​2 1-​​ounce squares bitter chocolate

1 cup sugar

2/​3 cup unsifted flour

1 tea­spoon vanilla

2 eggs, well beaten

1 cup coarsely chopped nuts

Melt butter and choco­late together in double boiler. Mix other ingre­di­ents and add chocolate-​​butter mix­ture. Place small size paper baking cups in muffin tins. Fill half full — no more. Bake 12 min­utes at 350 degrees. This may not look done, but don’t over­cook. While cakes are cooking pre­pare icing.

Icing

2 table­spoons butter

1 ounce square bitter chocolate

3/​4 box pow­dered sugar

Cold coffee

Melt butter and choco­late together. Add pow­dered sugar grad­u­ally and enough cold coffee to make mix­ture smooth. Ice cakes while hot (fill to top of paper cups.) Put in refrigerator.

Makes two dozen. These cup­cakes will freeze well.
